On our menu we use primarily market sourced, locally grown or foraged ingredients. A typical summer menu might include Dorset Mullet bought from Daegons the local fishmonger, vegetables from a biodynamic farm close to London herbs and spices from the surrounding market, salad leaves and edible flowers from our garden and a pudding made with local allotment grown damson - all washed down with an English white wine from Kent.
Suppliers
In addition to buying from other traders in Brixton Market, we get weekly supplies of fantastic Biodynamic fruit and Veg from Perry Court Farm in kent. They have a weekly stall at the Oval farmers market.
Our fish comes from – Daegons Fishmonger, Brixton Village Market
Andy Forbes of Brockwell Bake
Andy is our bread hero and makes us a small quantity of sourdough bread from heritage wheat he has grown himself and milled by hand. The bread is baked in a wood fired oven in Brixton and is quite simply the best bread I’ve ever eaten. When available we also sell bags of his flour and loaves in the shop.
Cannon and Cannon provide us with some delicious English Chacuterie, including Kentish chorizo and Suffolk Salami
Ossie’s Ginger Beer very, very gingery, not too sweet and handmade in Brixton
The Kernel Brewery, who are based in a railway arch in Bermondsey supply us very good beer indeed. India Pale Ales, old school London Porters and Stouts made from recipes dating back to 1890′s London
English white wines from Biddenden in Kent and Camel Valley in Cornwall
We think Sustaination is a fantastic idea – once the site is up and running we plan to map our key suppliers, so you can see exactly where where the bees who made the honey on our shelves live, who grew the lovely heritage tomatoes on your plate or brewed that amazing IPA you are drinking. We also hope it will put is in touch with new local producers or help us find someone local who has a glut of rhubarb for our chutney or elderflowers in their garden.
